Recipe: Almond Biscuits

Ingredients
250 gr almond meal
175 gr sugar
2 egg whites
100 gr almond grain or equivalent
1/2 lemon rind grated
4 drops of sour almond essence
Method
· Pre-heat oven to 180°C
· Mix all ingredients in a bow until well mixed and a dough is formed.
· Cover and allow to rest for 10 minutes
· Using a teaspoon take equal amounts of dough and roll gently into balls using the palms of your hands. You should make approx. 60 portions. Place on a lined oven tray
· Bake for approx. 20 minutes or until golden brown but soft within. Biscuits will be soft when hot so handle carefully.
Allow to cool on a rack and then store in a biscuit jar
