Recipe: Almond Meal Muffins
This is a very easy low fodmap recipe without sugar from BestRecipes.Com.
Perfect for Diabetics on the Low Fodmap Diet.
Ingredients
2 cups almond meal
2 tsp baking powder
1 pinch salt
1/4 cup water
1/4 cup olive oil
1/3 cup Natvia sugar substitute (be careful of some Stevia sweeteners which use high fodmap ingredients)
3 eggs
1 cup mixed berries ( I have used pineapple and they were delicious)
Method
Combine all ingredients, except berries, in a bowl. Stir until combined.
Gently fold through the berries or preferred fruit.
Grease 8 muffin cups.
Divide mixture evenly across muffin cups.
Bake at 180C for 20 minutes
